This week, we had a very special Flight Attendant, Chef friend, Kate Squibb, join us! Kate has a long history of cooking in restaurants all over Portland, and has maybe been seen on an episode or two of Chopped! Besides working as a chef, she’s been known to sling a drink or two behind some of our favorite Portland bars. She’s taking a little sabbatical from the restaurant world, which meant that she had time to stop in and hang with us and bring us snacks!
Kate and Kelsea have been friends a long time, so Kate is very well aware that popcorn is Kelsea’s favorite snack, so of course she showed up with a giant bag! It was cooked in a whirly pop and seasoned with Adobo seasoning and the magical ingredient, nutritional yeast. Needless to say, that bag didn’t last long.
Kate also showed up with a bag of Montecito Roadhouse tortilla chip and this dip that was so good, it tasted downright illegal. Kate likes to bring this super easy dip to parties cause it looks like she worked hard, but nnnaaah. We mmmaaaayyybbeeee got a little high before we recorded, and forgot to take pics before it all disappeared, but Kate allowed us to share this super easy recipe!
Chef Friend’s Illegally Good Dip
Block of cream cheese, softened
Bottle of Captain Mowatt’s Canceaux Sauce
Blend them together. Put it in a bowl and put some chips on the side and try to contain yourself.
