012: Snack Sunday, or Caramel Cheesecake Cookies
This week, Riley made us some amazing Caramel Cheesecake cookies. These were super easy. Like most of our recipes, it’s a mix of doctored mix and homemade!
Filling:
1 package cream cheese
1 cup powdered sugar
Vanilla
Soft Werther’s candies
Beat the cream cheese, powdered sugar, and vanilla until you have an amazing cream cheese frosting. Roll about 1 tablespoon of frosting around an unwrapped candy, place on a cookie sheet, and freeze overnight.
Cookie Mix:
1 box of cake mix (we used vanilla)
1/2 cup of vegetable oil
2 eggs
Beat all those ingredients together.
Finishing:
Take your frozen frosting/candy balls out of the freezer, and roll some of your cookie dough around them. Bake on an ungreased cookie sheet at 350 degrees for 14 minutes. This only makes about 8 cookies, so you’ll likely have leftover filling!
